Fish & Spinach Pasta Bake

Serves: 6 portions or 4 hungry people

Pasta Bake is the definition of comfort food! It is creamy, carby and cheesy. Everything you want and need comfort food to be! In my recipe I do not use the roux instead by combing cream cheese, milk and cream we have a white sauce that is lighter, easy to eat more of but still as tasty; if not more. This one pot dish is the perfect recipe to make if you are serving cooking for the family or when you have friends over! This #covid19 has us all uptight and under #lockdown. Use this #stayathome time to cook and spend quality time with your family. We all need to slow down and reassess what is really important to us and this is the best time to do it; over a bowl of delicious creamy and warm pasta bake to soothe the soul!

HERE IS THE RECIPE:


MAIN INGREDIENTS:

a) Bowtie Pasta - 500g (Boiled to extra al-dente)

b) Fish Fillets - 900g (Cut into 1 inch chunks)

c) Frozen Spinach - 450g (Defrosted and water squeezed out)

d) Leeks - 200g (Sliced thinly diagonally)

e) Garlic - 1 tablespoon (Coarsely chopped)

f) Parmesan - 125g (Coarsely grated )

g) Sharp Cheddar - 25g ( Coarsely grated)

h) Pine Nuts - 25g


SEASONINGS:

a) Yellow Mustard - ¼ cup

b) Tomato Paste - 1½ tablespoons

c) Garlic Powder - 1 teaspoon

d) Smoked Paprika - 2 teaspoons

e) Cream Cheese - 250g

f) Heavy Cream - 1¼ Cup

g) Milk - 1¼ Cup

h) Salt - To Taste

i) Pepper - To Taste


METHOD:

1) Preheat the oven to 180 degrees.

2) Boil pasta in salted water for 2 minutes less then instructed on the packet; Extra al-dente). Drain and reserve ¼ cup of the pasta water. Set aside.

3) Marinade the fish chucks with Yellow mustard, garlic powder, smoked paprika and season with salt and pepper to taste; set aside for 5 mins.

4) Heat a large dutch oven, and add in chopped garlic and leeks; saute until translucent and fragrant.

5) Add in drained spinach and saute on high heat until water has evaporated; approx 2-3 mins.

6) Add in marinated fish chunks and cook on high heat until fish is barely cooked; approx 4 mins.

7) Stir in tomato paste, cream cheese, heavy cream, milk and pasta water until all well combined; Taste for seasoning.

8) Add drained pasta and mix well.

9) Top with all shredded cheese and pine nuts.

10) Put in the oven, uncovered for 10 mins; switch to broil and broil top until golden brown~ About 5 mins.

11) SERVE AND ENJOY!
