Broccoli and King Oyster Mushroom Vege Stirfry #asiancookingseries

Everyone should be eating more vegetables; making tasty and healthy vegetable dishes does not have to be difficult. Stir frying is, in my opinion, one of the best ways to cook vegetables. Stir frying vegetables retain the most nutrients in the vegetables due to its short cooking time and high heat.

I chose oyster mushrooms because once they are cooked down they have a slightly chewy texture and really soak up the flavour of the sauce making it almost reminiscent of chicken, great for adding texture to your dish.

In this recipe I give you a easy stir fry sauce recipe that you can use with any vegetable combination of your choice. Also I show you the knife skills used to prepare these vegetables!

*For #vegans , #vegetarians and #plantbased eaters you can swap out oyster sauce for mushroom sauce.



MAIN INGREDIENTS (Preparation Techniques in video)

a) Broccoli - 600 g

b) King Oyster Mushrooms - 400 g

c) Red Bell Pepper - 350 g

d) Garlic - 10 g

e) Red Onion - 80 g


STIR FRY SAUCE

a) Shao Xing Cooking Wine - 1 tablespoon

b) Oyster Sauce - 1 tablespoon

c) Sesame Oil - 2 teaspoons

d) Soy Sauce - 1 1/2 tablespoon

e) Salt - 1 teaspoon

f) Corn Starch - 1 1/2 tablespoon

g) Water - 1 1/2 tablespoon

h) Pepper - 1/2 teaspoon


METHOD:

- Chop garlic

- Slice Onion

- Rinse and cut all other vegetables as shown in video

- Mix stir fry sauce ingredients in a bowl

- Heat oil in a wok and toss in onions and garlic, stir fry on high heat until very slightly brown and fragrant

- Add in mushrooms and stir fry until water is released from mushrooms

- Let liquid in wok boil off by half; about 3 mins on high heat

- Add in broccoli and stir fry on high heat for about 20 seconds, or until broccoli turns a vibrant green colour

- Toss in bell pepper

- Then add in stir fry sauce, keep stirring in wok on high heat until corn starch in the sauce thickens up and coats all the vegetables; about 10-15 seconds

- Ready to serve and enjoy!
